This recipe is awesome for those hot summer days when, by the end of the day, the last thing you want to do is cook. Nonetheless, the family’s got to eat. Here you’ve done almost all the work, and very little work at that, in the cool and early part of the day. When you are ready to eat, just add some fresh fruit, chips, salsa and guacamole and you are done! If you’re worried about the crock pot heating up your kitchen (it doesn’t seem to effect mine too much), then plug it on the back deck or even in the garage.
I like this recipe because it makes a lot – and that means leftovers! And with my busy life – I celebrate leftovers. Usually they don’t make it to another dinner, but my boys (who aren’t so much boys anymore) devour them for lunch the next day. To stretch this recipe, add a can of beans the last hour of cooking.
First place about 3-1/2 pounds of boneless, skinless chicken breasts in a crock pot. I wouldn’t use less than 3 pounds, but you could probably use up to 5 pounds. (I’m leaning away from saying a certain number of pieces because as you can see from the pic - they can greatly vary in size.)
Then slice up a few onions and sweet peppers (red, green, yellow, orange), and place on top of chicken. Sprinkle with 2 packets of fajita seasoning mix, and cook on low for 6-7 hours or on high for 4-5 hours. Chicken is done when you can take two forks and easily shred the meat. P.S. If you’d like your onions and peppers a bit more crisp, add them half way through cooking time.

Have a busy day and would like start dinner ahead of time. This recipe fits the bill. Plus, there's usually plenty for leftovers for lunch the next day.
- 3-1/2 pounds chicken breast boneless, skinless
- 2 medium onions sliced
- 2 sweet peppers sliced
- 2 packages fajita seasoning mix
- Place chicken in bottom of a slow cooker. Top with onions, peppers and seasoning mix. Cook for 3-4 hours on High or 7-8 hours on Low or until chicken shreds easily with a fork. That's it!
- Serve in tortillas and add the following as desired:
Cilantro, Sour Cream, Guacamole, Avocado slices
