Here’s another little sweet treat to keep you going. Three healthy, delicious ingredients full of flavor so intense you only need one or two. What I like about these is that they are low carb/low glycemic without any type of added sweetener. Make sure you use dark chocolate chips as milk chocolate is higher in carbs. This recipe is also in the Six Ingredients or Less Low Carb book. When we wrote the book, low carb chocolate was available. I couldn’t find it last week, but we live rather remote. If you can find it, it brings the net carbs down to 1 gram. The nutritional data for this recipe is based on 80% dark chocolate and the net carb per candy is 3.6 grams.
Just for fun we sprinkled some with some extra coconut and drizzled the others with melted white chocolate chips.
We kind of had a low carb cookie day the other day. We made these along with two recipes of the Almond Butter Cookies, put them in zipper baggies and into the refrigerator. Now we are set with our low glycemic snacks for quite some time. The other treat on this tray is the Almond Butter Cookie recipe.
Chocolate Coconut Drops - Gluten Free & Low Carb

Three healthy, delicious ingredients full of flavor so intense you only need one or two.
- Melt chocolate in a heavy medium saucepan over very low heat; stirring constantly until smooth.
- Add nuts and coconut. Drop by teaspoon or small cookie scoop onto waxed or parchment paper lined baking sheet. Allow to set at room temperature or chill until firm.
